
Spaghetti all'assasina
Spaghetti all'assassina was born from the need to use the leftovers from the day before and now it is a dish offered in restaurants. The ideal is to cook it in an iron pan. Its crunchiness is a must!
Ingredients for 4 persons:
320 gr Spaghetti Pasta Centoni
4 - 5 cherry tomatoes
1 Chili
250 g strained tomatoes
Extra virgin olive oil
2 cloves of garlic
Salt
In a pan, possibly made of iron, fry the two garlic cloves with the chili. Then add the spaghetti and fry.
Halve the cherry tomatoes and add them to the pan. Bring the water to the boil and add a few ladles of boiling water to the pan along with the tomato puree.
When the water evaporates, add more water and salt. When the spaghetti is almost cooked, increase the heat to maximum and leave the spaghetti for a few minutes without stirring.
